Delicious vegan french toast that has a hint of cinnamon and vanilla, and made completely egg-free thanks to the neat egg.

Neat French Toast

Directions

1Prepare neat egg with 1/2 tbsp of vanilla.

2Dip bread into mixture.

3Cook over medium heat in coconut oil or suitable non-stick skillet.

Serve with a side of your favorite fruits!

1 neat egg

bread, your preference

1/2 tbsp cinnamon

1/2 tbsp vanilla

1/2 cup almond milk (or another variety) and whisk

Tried this recipe with regular-thickness bread (vegan). Used a double-burner non-stick griddle with vegan butter. A quick coating of the batter and onto the medium heat skillet, the coating seemed to boil at first and almost steamed the bread instead of browning it. Do not disturb the toast while it cooks and browns – the coating will peel off, exposing soggy bread underneath. I would suggest using thicker bread also so that the bread doesn’t soak up the batter immediately. The flavor was good with maple syrup, it might take a few attempts to get the texture right (not mushy inside). I used Silk almond milk (original). I’m glad to have a recipe to use for vegan french toast! Will make again with thicker bread and will leave it to cook undisturbed before flipping. Thanks for the recipe!
